PUMPKIN SOUP RECIPE. As it’s still raining outside I’m doing a pumpkin soup for lunch.
This is, by fay, my favorite soup recipe ever! I took it over from my mum and I don’t know if she invented it or got it from somewhere else but believe me guys, the inventor is a genius!
What you need :
– 1 pumpkin ( orange hokkaido squash )
– 1 onion
– 500ml water and vegetable stock
– orange juice
– cream or coconut milk
Business before pleasure (you better have a good knife for this) :
Cut the onion and the pumpkin (doesn’t have to be super small we’ll blend everything).
Stew the onions and the pumpkin for several minutes in oil and then put water and the vegetable stock into the pot.
This is the part where we have some time for cleaning or reading a magazine – just let everything cook for about 45min.
After 45min the pumpkin should be soft and we just blend everything together to get a creamy soup.
We put the mass back in the pot, add a glass of orange juice and coconut milk – heat it up again, et voila!
